Mexican Broiled Corn

Ingredients

6 ears corn
2 limes, halved
1/2 cup sour cream
2 TBSP whole milk
3 TBSP butter
1 TBSP chili powder
1 1/2 TBSP salt
1/2 cup shredded queso fresco or parmesan cheese

Instructions

1) Boil corn with 2 lime halves for 6-8 minutes, until the corn is tender. Place on clean kitchen towel to drain water.
2) In small mixing bowl combine the sour cream and milk, set aside.
3)lace the corn on a small baking sheet and brush with melted butter.
4)Arrange the over rack 8 inches from the broiler unit and adjust over settings to broil. Place the baking sheet in the over and broil corn for 8-10 minutes, taking the corn out and baste with melted butter every 2-3 minutes. The corn should be golden brown when ready.
5) Remove the corn and squeeze the remaining lime halves over the warm corn.
6)Generously brush the corn with the sour cream mixture and sprinkle with chili powder, salt and shredded cheese.
