Coconut Cream Pie

pre bake shell or your own
2/3 cup sugar
1/4 cup corn starch
1/2 tsp salt
3 cups milk
4 eggs
2 TBSP butter
2 tsp. vanilla
1 1/2 cup coconut


cook until thick and boiling - boil 1 minute.
Slightly beat 4 egg yolks then add half milk mixture to the eggs; stir, then add egg mixture to the milk mixture and boil 1 minute.
Then add 2 TBSP butter, 2 tsp vanilla and 3/4 to 1 cup coconut and mix well. Pour into pie shell and chill covered with saran wrap.
Toast 1/2 cup coconut to add to the top.
